“What are microgreens?” Microgreens are young vegetable greens that are
approximately 1-3 inches tall. Microgreens are also known as vegetable confetti or
micro herbs. But make sure you do not confuse yourself with microgreens and
sprouts. They differ from sprouts, which do not have
leaves. Microgreens are more similar to baby greens.
They are germinating seedlings that are harvested in
between 7-14 days that is just after the cotyledon leaves
have developed. There are a number of microgreens
available all over the world. Some of these are dill, carrot,
celery, fennel, cauliflower, broccoli, cabbage, radish,
garlic, leek and many, more.
Microgreens have been used in the culinary industry since
1980s. Vegetable confetti is of rich diet as it contains higher
nutrient levels, more than matured green vegetables.
Therefore it is a perfect nutritional punch and a good addition
in any diet. There is also evidence that microgreens can kill
cancers. In Indian dining, microgreens, like green coriander
leaves or mint leaves, can be used to garnish various dishes,
or as components of vegetable or fruit salads.
