Instructions

         1.  If your microgreens have some soil on them, give them a light wash and air dry them
             in a colander for five minutes. (They are very fragile so need to be handled with care).
         2.  Place them in a bowl and add the remaining salad ingredients.
         3.  Stir up your vinaigrette in a little jar and pour on top of the salad. Enjoy!

             A fulfilling meal is always incomplete without a sweet dessert. So, here comes a
             yummy, delicious cake.

             Microgreen, Zucchini & Carrot Cake.


             INGREDIENTS


                  1 cup microgreens
                  2 zucchini
                  2 carrots
                  1 cup grated Parmesan cheese
                  3 eggs
                  2 tsp. flour, any flour will do, but
                    our favourite is chickpea for this
                    dish
                  1 tsp. garlic powder

             INSTRUCTIONS

                1.  Grate zucchini and carrots into a large bowl. Add cheese.
                2.  Cut microgreens in two-inch pieces and add to the bowl.
                3.  Beat eggs, flour, garlic powder, salt, and pepper in a small bowl.
                4.  Pour egg mixture over vegetables and toss to evenly coat.
                5.  Scoop spoonful of mixture onto a lightly greased sheet pan.
                6.  Flatten spoonful into patties.
                7.  Bake for 10 minutes & serve.
